Today, Nutoras produces twenty five different types of cheeses to fulfill the needs of various consumers. Nutoras’ artisanal cheeses are aged(matured) over varying lengths of time so as to attain their distinct texture, aroma and flavour. Some of the cheeses, such as parmesan, need more than twelve months of maturation. The average ageing of cheeses, across Nutoras’ portfolio, is roughly 150 days. Nutoras is one of the few companies in India with a smokehouse for producing smoked cheeses such as smoked cheddar, smoked processed cheese, and smoked scarmoza. Nutoras also makes Halloumi, Montasio, and other speciality cheeses.

The cheese making journey starts with the key raw ingredient milk as the company strives to produce Healthy & Nutritious products for their customers. Nutoras has been working with its farmer community to produce grassfed, free-range milk. Grassfed, free range milk is more nutritious and gives the cheese made out of it a superior texture and flavour. The milk is then processed to form cheese, which is then aged according to the type of cheese and its requirements. Artisanal cheeses from Nutoras are matured in both cold rooms and caves.
